Summer is here & cookouts are the perfect way to hang out with your family and friends. I was cooking out with my family today and decided to make corn dip. I usually just make it with corn, rotel, and cream cheese, but as I was walking through the grocery store this morning I decided to jazz it up a little.
It was so delicious that I wanted to share it with y'all.
Cookout Corn Dip
3 cans drained corn
1 can drained rotel
2 blocks cream cheese
Bag of real bacon bits
Bunch of chopped green onion
2c Monterey Jack cheese
Dollop of mayo
Heat to your individual taste & serve with tortilla chips.
I heated mine in the microwave because I was having an impatient morning. I heated for 2 minutes, stirred, then heated 2 more minutes and it was perfect for me.
